coconut chia pudding

Rem how in the prev post it was mentioned that chia seeds can be incorporated in desserts? 



Well, here is how you can prepare a super duper easy dessert, coconut chia pudding! So yummy (if you are a coconut lover).


3 reasons why this recipe is cool:
  1. We are replacing sago, with chia seeds. (What's so good about chia seeds?, check out the  prev post to know it's benefits).
  2. We are replacing conventional sugar with coconut palm sugar. What's so good about coconut palm sugar? Well, coconut palm sugar is unbleached, unrefined, contains potassium, iron, vitamins B1, B2, B3, B6 , C and  has a low glycemic index (GI). Now because it's low, there is a slower release of energy into the bloodstream, resulting in reduced hunger and also lower chances of your blood sugar crashing. 
  3. It's yummy. :)

So, just keep in mind that the more chia seeds you use, the thicker your pudding will be. Adjust the amount you use accordingly. (I would suggest using less if you want a stronger coconut flavor).
